Selective Colorization
This tutorial explains how to make a picture black and white, but still leave a portion of it in color, to stand out in the photo. This is simply a variation of the other tutorial already here.

Open your image in Photoshop.
Right click on the image in the Layers pallette and click "Duplicate Layer"
Click ok when the dialog box pops up.
With your new layer (Background copy) still selected, press Ctrl + U to bring up the Hue/Saturation settings. Slide the Hue and Saturation bars ALL the way to the left. Your image should now appear in Black and White.
Select the Eraser tool from your main tools.
Now, again, with the Background copy layer still selected, brush over the parts of the image you would like to appear in color. Depending on the size of your image, and the size of the area you are coloring, you may want to change the brush size by clicking on Brush at the top of the screen.
Once finished "erasing" the portion you would like colored, Go to Layer - Flatten Image from the main menu.
Voila, you have colorized a photo.
